Ewww....

I have never seen anyone so comfortable without a shirt on (except maybe teenage boys, or Matthew McConaughey) as my neighbor.  Seriously, he walked around all day with black track shorts on (his normal weekend wear) and nothing else, watching the people who were installing his new siding.

If he looked like Matthew McConaughey, maybe I wouldn't mind as much.

But he doesn't.

Sidebar - I had to google Matthew McConaughey to learn how to spell his name.  I think I've got it now.

Poolside Salad Recipe

When Mitch and I were in Vegas, we ordered the summer salad when we were lounging poolside at Mandalay Bay.  It was easily one of the best salads I've ever eaten in my lifetime, and I've been able to re-create it at home.  I forgot to take pictures of the salad tonight when I made it (I don't know how I would forget, seeing as I had two kids who were nipping at my heels the entire time), but the next time I make it I'll post them.  It is light and refreshing, perfect for a summer brunch, lunch, or dinner.  I've served it with hamburgers and with quiche, would be good with bacon (what isn't?) or chicken to make it more of a meal.

I don't measure anything when I make it, so everything is approximate.  Use your best judgment.

Poolside Salad

Salad:
1-container or bag baby greens
1/2 tub crumbled blue cheese
1 cup candied walnuts
1 cup blueberries
1 cup raspberries

Dressing:
1/2 cup blueberries
1/4 cup raspberries
2 Tb. honey
1 Tb. vinegar
1/2 cup extra virgin olive oil

Mix all ingredients for dressing in blender or food processor.  Refrigerate dressing until ready to use.

Mix all ingredients for salad together in bowl.  Coat with dressing just before serving.  Stir and serve.

Enjoy!

Vegas Done Right

For the record, I started this post about two weeks ago, and forgot to finish it.  Even though the trip was almost a month ago, it's still worth blogging about because it was so awesome.  Enjoy.

For our ten-year anniversary (how can it be so long already?), Mitch and I left the girls with Grama Poke and headed to Sin City.  The 72-hour trip was blissful, mostly because there wasn't someone who needed changing, or wiping, or milk, or a toy, or to be fed.  Seriously, the best part of the trip was sleeping in and enjoying a lovely cup of Starbucks while watching morning TV in bed.  The swim in the tub in our suite wasn't so bad, either.

Mitch also took it upon himself to upgrade us when we were poolside from lowly deck chairs in the blazing 100+ degree temps to shady cabanas, complete with TV, refrigerator stocked with water and pop, and waitstaff at our fingertips.  It. Was. Awesome.  We spent two full days at the pool, soaking up rays, watching cable TV, and drinking some fantastic mojitos.

And yes, I did put my feet in the beer tub.  Nevermind the heat outside - I needed to be cooled off while reading "Fifty Shades".  Oh. My.

After our days at the pool, we'd head to dinner and out to gamble for the night.  Mitch continued his rounds of mojitos at the Mexican restaurant....

......while I earned my drinking money back from the slots in the various casinos on the strip.  One of my most favorite games to play is "Leprechaun's Gold", which you don't see very often anymore in Vegas.  I spied it while walking through Monte Carlo, slipped $5, and I came away with $30 from that machine.  Hell yeah!

Do I ever love the bonus....

Mitch had seen these machines a few times and finally decided to play it -

But the Cougars took his money.

We had a fabulous trip, and I have a feeling Mitch is already planning our next trip to the desert!
